Roasted Pumpkin Seeds

As I was wrapping up some things for work before lunch, I heard sounds of a running toddler, a knock at the door and a little voice yelling out, “Mama!”

The Shwins proudly shared some freshly roasted pumpkin seeds, their morning activity with Basil. They tasted a lot like kettle corn and I wished we had gotten our hands on some larger pumpkins! I loved that they kept saying “I made it” as they happily ate their pre-lunch appetizer..

Roasted Pumpkin Seeds

  • fresh pumpkin seeds
  • oil
  • salt
  • brown sugar
  • cinnamon
  1. Boil the pumpkin seeds in salted water for 20 minutes
  2. Remove the pumpkin seeds from the water and spray with oil
  3. Sprinkle with salt, brown sugar and cinnamon
  4. Bake at 300 degrees for 45 minutes
