As I was wrapping up some things for work before lunch, I heard sounds of a running toddler, a knock at the door and a little voice yelling out, “Mama!”
The Shwins proudly shared some freshly roasted pumpkin seeds, their morning activity with Basil. They tasted a lot like kettle corn and I wished we had gotten our hands on some larger pumpkins! I loved that they kept saying “I made it” as they happily ate their pre-lunch appetizer..
- fresh pumpkin seeds
- brown sugar
- Boil the pumpkin seeds in salted water for 20 minutes
- Remove the pumpkin seeds from the water and spray with oil
- Sprinkle with salt, brown sugar and cinnamon
- Bake at 300 degrees for 45 minutes
